Instructions
- Grate the yellow squash using a box grater or food processor.
- Place the grated squash in a colander and sprinkle with 1/2 teaspoon salt. Let it sit for 10–15 minutes.
- Wrap the squash in a clean kitchen towel or paper towels and squeeze out as much liquid as possible until no more drains.
- Transfer the drained squash into a large bowl. Add the beaten egg, breadcrumbs, shredded cheddar cheese, garlic powder, onion powder, and pepper to taste.
- Mix until the mixture sticks together when pressed.
- If the mixture is too wet, add additional tablespoons of breadcrumbs until firm. If too dry, add a second beaten egg or a splash of milk to reach a slightly sticky consistency.
- Scoop about 1 tablespoon of the mixture and roll between damp hands into small cylinders or press into a mini muffin pan. Place them on a parchment-lined baking sheet or air fryer basket, keeping tots uniform in size.
- For oven: Preheat to 400°F (200°C). Lightly spray or brush tots with oil. Bake for 20–25 minutes, flipping halfway through, until golden and firm.
- For air fryer: Set to 375°F (190°C). Arrange tots in a single layer with space between. Air fry for 10–12 minutes, shaking the basket halfway, until crispy.
