  • 34 tablespoons Avocado Oil or Olive Oil for frying

  • 1 tablespoon Sriracha or Hot Sauce, to taste
  • 1 tablespoon Lemon Juice
  • 1/4 teaspoon Garlic Powder

Instructions

  1. Finely shred about half a medium green cabbage.
  2. Shred one medium carrot.
  3. Thinly slice three scallions.
  4. Mince two garlic cloves.
  5. Lightly beat three eggs.
  6. Squeeze excess moisture from the shredded cabbage using a clean towel or hands.
  7. In a large bowl, combine shredded cabbage, carrot, scallions, beaten eggs, 1 cup flour, minced garlic, salt, black pepper, and 1/2 tsp paprika; mix until evenly combined (batter may be lumpy).
  8. Heat 3–4 tablespoons oil in a skillet over medium heat until shimmering.
  9. Scoop about 1/4 cup batter and press into a 3-inch patty.
  10. Fry each patty 3–4 minutes per side until golden brown and crispy, avoiding overcrowding the pan and adding oil as needed.
  11. Transfer cooked fritters to a plate lined with paper towels to drain.
  12. Repeat frying remaining batter until all fritters are cooked.
  13. In a small bowl, whisk 1 cup sour cream or Greek yogurt, 1 tbsp sriracha, 1 tbsp lemon juice, and 1/4 tsp garlic powder until smooth.
  14. Sprinkle extra sliced scallions over the fritters if desired.
