A moist and tender pumpkin bread filled with mini semi-sweet chocolate chips and warm fall spices, easy to make with one bowl and no mixer.

  • 1 cup pumpkin puree
  • ½ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • ¼ cup canola or vegetable oil (liquid-state coconut oil may be substituted)

  • 1 tablespoon mild or medium-flavored molasses (not blackstrap)
  • 2 teaspoons pumpkin pie spice extract (or vanilla extract)
  • 2 teaspoons pumpkin pie spice (or a mixture of cinnamon, allspice, cloves, and nutmeg)
  • 2 teaspoons cinnamon
  • ½ teaspoon ground nutmeg
  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup mini semi-sweet chocolate chips (mini size recommended, regular may be substituted)

Instructions

  1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan and dust with flour or use floured cooking spray; set aside.
  2. In a large bowl, whisk together the egg, pumpkin puree, light brown sugar, granulated sugar, oil, sour cream, molasses, pumpkin pie spice extract, pumpkin pie spice, cinnamon, and nutmeg until smooth.
  3. Stir in the all-purpose flour, baking powder, baking soda, and salt until just combined; avoid overmixing.
  4. If using regular-size chocolate chips, toss them lightly with flour to prevent sinking.
  5. Fold in the mini semi-sweet chocolate chips until evenly distributed.
  6. Pour batter into prepared pan, smooth the top gently, and push batter into edges for even baking.
  7. Bake for 50-55 minutes until top is golden and domed, and a toothpick inserted comes out clean or with a few moist crumbs (note melted chocolate can make it appear moist).
  8. At about 40 minutes, if browning too fast, tent lightly with foil and continue baking.
  9. Cool in the pan for 15 minutes, then remove to wire rack to cool completely before slicing.
