Refreshing and healthy homemade popsicles made from pure watermelon and strawberries with lime, naturally sweet and vegan-friendly.

Ingredients

  • 3 heaping cups cubed watermelon
  • 1 heaping cup strawberries (fresh or frozen)
  • Zest of 1 lime (1 teaspoon)
  • Juice of 1 lime (2 Tablespoons)

Instructions

  1. Cube watermelon, hull strawberries, and zest and juice the lime.
  2. If using frozen strawberries, let them thaw a few minutes before blending.
  3. Place watermelon, strawberries, lime zest, and lime juice in a blender.
  4. Puree until smooth and uniform.
  5. Taste and adjust, adding more lime juice or a touch of sweetener if desired.
  6. Optional: strain the puree to remove seeds or fibrous bits for a silkier texture.
  7. Pour the mixture into popsicle molds or 3-oz cups, leaving about 1/2-inch headspace if using cups.
  8. Cover molds or seal cups with foil and insert popsicle sticks.
  9. Freeze for 3 to 4 hours or until solid.
  10. Run the outside of the mold under cold water for a few seconds, then gently wiggle the sticks side to side to loosen and remove the popsicles; repeat rinse and wiggle if needed.
  11. If using paper cups, peel away the cup or rinse the outside to loosen the pops before removing the stick.

Store leftover popsicles in an airtight freezer bag for 2-3 weeks or up to a month for best freshness., Alternatively, keep popsicles sealed in the molds and consume within a week for optimal texture., For unmolding, run mold under cold water briefly and wiggle sticks gently to loosen popsicles., You can substitute lime with lemon, add fresh mint leaves, or swap strawberries for peaches, blueberries, or raspberries., If you don’t have popsicle molds, use small 3oz paper cups covered with foil to freeze popsicles.
