A flavorful one-pot stovetop braised oxtail dish that yields tender, fall-off-the-bone meat in a rich savory sauce, perfect over mashed potatoes or rice.

Ingredients

  • 3 lbs oxtails, fat trimmed
  • 3 tbsp olive oil
  • 3 tsp herbes de Provence
  • 2 1/2 tsp seasoning salt
  • 2 tsp ground black pepper
  • 1 1/2 tsp red pepper flakes (optional)
  • 1 large yellow onion, chopped
  • 68 cloves garlic, peeled
  • 3 bay leaves
  • 34 sprigs fresh thyme
  • 48 oz beef broth
  • 3 tbsp browning sauce
  • 5 large carrots, peeled & chopped

Instructions

  1. Trim excess fat from oxtails and pat them dry.
  2. Place oxtails in a large bowl, drizzle with olive oil, and sprinkle herbes de Provence, seasoning salt, black pepper, and red pepper flakes; toss to coat evenly.
  3. Heat a heavy-bottomed pot or Dutch oven over medium-high heat until hot.
  4. Add oxtails in batches to the hot pot and brown on all sides without crowding; set browned pieces aside.
  5. Lower heat to medium and add chopped onion to the pot; cook 4–5 minutes until softened and starting to brown.
  6. Add garlic cloves, bay leaves, and fresh thyme to the pot and cook about 1 minute to release aroma.
  7. Return browned oxtails to the pot, pour in browning sauce, then add about 6 cups (48 oz) beef broth and scrape the bottom of the pot to deglaze.
  8. Bring to a gentle boil, then reduce to a low–medium simmer, cover, and cook for about 3½ hours, checking occasionally and adding broth if the liquid gets low.
  9. About 30 minutes before the end of cooking, stir in chopped carrots and cover again.
  10. Continue to simmer until the carrots are tender and the oxtails are very tender and nearly falling off the bone.
  11. Taste the sauce and adjust seasoning with salt and pepper as needed.
  12. If the sauce is greasy, skim excess fat with a spoon while warm; if you prefer a thicker sauce, simmer uncovered 10–20 minutes to reduce or stir in a cornstarch slurry (1 tbsp cornstarch + 1–2 tbsp cold water) and cook until thickened.
