- 2 cups cooked jasmine or brown rice
- 1 tablespoon rice vinegar (optional, for extra flavor)
- 1 cup shredded carrots
- 1 avocado, sliced
- 1 cup cucumber slices
- 2 green onions, chopped
- 2 tablespoons sesame seeds (optional)
- Soy sauce or tamari for drizzling (optional)
Instructions
- Warm olive oil in a skillet over medium-high heat.
- In a bowl, mix smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Toss shrimp in the spice mix until fully coated. (Optional: let shrimp rest in the seasoning blend for 15 minutes to deepen flavor.)
- Place shrimp in the hot skillet and cook 2–3 minutes per side until shrimp turn pink and opaque.
- Remove cooked shrimp from the skillet and set aside.
- In a bowl, whisk together mayonnaise, sriracha, and lime juice until creamy and smooth; adjust sriracha to taste.
- Optionally stir a splash of rice vinegar into cooked rice to brighten flavor.
- Divide rice among serving bowls as the base.
- Top each bowl with cooked shrimp, shredded carrots, avocado slices, cucumber slices, and chopped green onions.
- Drizzle spicy mayo over the bowls and sprinkle with sesame seeds; drizzle soy sauce or tamari if desired.
