Ingredients
- 4 fillets Tilapia (or cod/haddock as swaps)
- 2 large Red Bell Peppers (or yellow/green as alternative)
- 2 tablespoons Olive Oil (or avocado oil)
- 2 cloves Garlic (fresh preferred)
- Salt, to taste
- Pepper, to taste
- 2 tablespoons Lemon Juice (or lime juice for a bright twist)
Instructions
- Preheat oven to 400°F (200°C).
- Slice red bell peppers into strips.
- Toss pepper strips with olive oil, salt, and pepper; spread in a single layer on a baking sheet.
- Roast peppers about 20 minutes until tender and charred.
- Let roasted peppers cool slightly; transfer to a blender with garlic cloves and lemon juice and blend until smooth.
- If sauce is too thick, add a splash of water or broth to adjust consistency.
- Heat a splash of olive oil in a skillet over medium heat.
- Season tilapia fillets with salt and pepper on both sides.
- Place fillets in the hot skillet and cook 3–4 minutes per side until golden and fish flakes easily with a fork.
- Pour roasted pepper sauce over cooked tilapia and simmer 1–2 minutes to heat through and meld flavors.
- Spoon sauce over fillets and remove from heat.
