- 1 cup refried black beans, homemade or canned
- 1 cup shredded cheese (such as pepper jack for a little spice)
- 6–8 corn tortillas
- 1 cup pumpkin puree
- 1/4 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1/2 teaspoon smoked paprika (or regular paprika)
- 1/8 teaspoon ground nutmeg
- Salt, to taste
- Cooking spray, butter, or oil of choice
- Optional toppings: avocado, salsa, hot sauce, pico de gallo, sour cream
Instructions
- In a medium bowl, scoop pumpkin puree and add salt, cumin, smoked paprika, cinnamon, and nutmeg; stir until evenly combined.
- If pumpkin puree is watery, drain excess liquid or cook it in a skillet for a few minutes to thicken.
- Warm corn tortillas in a pan with a little cooking spray or microwave briefly until soft and flexible.
- Lay a tortilla flat and spread 1–2 tablespoons refried beans on one side, spoon on a similar amount of spiced pumpkin puree, sprinkle a small handful of shredded cheese, then fold the tortilla over.
- Heat a large skillet over medium heat and add cooking spray, butter, or oil.
- Place folded tacos cheese-side down in the skillet and gently press each taco with a spatula to help melt the cheese and seal edges.
- Cook tacos about 4–5 minutes per side until tortillas are golden and crisp and the cheese is fully melted inside.
- Let tacos rest about a minute to firm up before eating.
