Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup basil pesto (homemade or store-bought)
- 1 cup fresh mozzarella, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Season both sides of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear chicken breasts 3 6 minutes per side until golden brown.
- Spread pesto evenly over the top of each chicken breast.
- Top each pesto-covered chicken breast with slices of fresh mozzarella.
- Bake in the preheated oven 15 20 minutes, or until internal temperature reaches 165°F (75°C) and the cheese is melted and bubbly.
- Let chicken rest a few minutes, then garnish with fresh basil leaves.
