Instructions

  1. Heat 2 tablespoons olive oil in a large pot over medium heat.
  2. Add diced onion, minced garlic, diced carrots, and diced celery; sauté for about 4 to 5 minutes until the onion is translucent and vegetables are tender.
  3. Add shredded cooked chicken to the pot and stir to combine with the vegetables.
  4. Pour in 4 cups chicken broth and bring to a boil, then reduce to a gentle simmer.
  5. Stir in 1 cup heavy cream, 1 teaspoon thyme, and 1 teaspoon parsley, and simmer for about 10 minutes to meld flavors.
  6. Add 1 pound gnocchi and cook according to package instructions (about 2 to 3 minutes) until they float.
  7. Stir in about 2 cups fresh spinach and cook until wilted.
  8. Season with salt and pepper to taste.
  9. Ladle the soup into bowls and serve hot.
