- 1/3 cup maple syrup

Instructions
- Preheat your oven to 300°F and line a large baking sheet with parchment paper.
- In a medium bowl, combine rolled oats, chopped almonds, and cinnamon, stirring until evenly coated.
- In a small microwave-safe bowl, melt coconut oil for about 30 seconds.
- Add maple syrup to the coconut oil and microwave in 30-second bursts until warm and lightly bubbling; stir in vanilla extract.
- Pour the warm wet mixture over the oat mixture and stir until everything is evenly coated.
- Spread the granola in a thin, even layer on the prepared baking sheet and press gently if you want large clusters.
- Bake at 300°F for 22–25 minutes, watching closely near the end so the edges brown but don’t burn.
- Remove from oven and let granola cool completely on the baking sheet (about 30 minutes) so it crisps up.
- Break the cooled granola into clusters of your desired size and enjoy.
