Ingredients
- 1 cup Almonds (see notes for alternatives)
- 1 cup Hazelnuts
- 1 cup Pecans
- 1/3 cup Pumpkin seeds
- 1/3 cup Sunflower seeds
- 6 tbsp Besti Monk Fruit Allulose Blend
- 1/2 cup Golden flaxseed meal
- 1 large Egg white
- 1/4 cup Unsalted butter (measured solid, then melted; substitute with coconut oil, butter-flavored coconut oil, or ghee for dairy-free)
- 1 tsp Vanilla extract
Instructions
- Preheat oven to 325°F (163°C) and line a large or two smaller baking sheets with parchment paper.
- Pulse almonds and hazelnuts in a food processor intermittently until chopped into large chunks (about 1/4 to 1/2 their original size).
- Add pecans and pulse a few times until in large pieces.
- Add pumpkin seeds, sunflower seeds, Besti sweetener, and flaxseed meal; mix or pulse just until combined without overprocessing.
- Stir in the egg white.
- Measure solid butter, melt it, whisk with vanilla extract, then pour over the nut-and-seed mixture.
- Mix well so all pieces are evenly coated and slightly damp.
- Spread the mixture evenly on the parchment-lined baking sheet and press into a thin rectangle about 1/4 to 1/3 inch thick.
- Bake 15–18 minutes, until the edges turn golden brown and the mixture is firm.
- Cool completely on the baking sheet, then break into clusters or pieces.
Notes
Process hard nuts before softer nuts to avoid turning softer nuts into flour and preserve cluster texture., Avoid overprocessing to keep plenty of nut chunks and intact seeds for a crunchy bite., Mix wet ingredients in a bowl if preferred to avoid overprocessing; however, using the food processor saves washing a bowl., If you don’t have a food processor, finely chop nuts and seeds with a knife or use a strong blender. Texture will be slightly different but still delicious., Spread granola mixture evenly and thin (1/4 to 1/3 inch thick) for proper crispness; thicker layers won’t crisp well and uneven thickness can cause burnt edges., Cool granola fully after baking to allow it to crisp before breaking into clusters., Store cooled granola in airtight containers at room temperature for 3–4 weeks or freeze for up to 6 months., To refresh stored granola, warm in a 300°F (150°C) oven for 5–8 minutes, stirring once, then cool completely before storing or serving.
