Instructions
- Preheat oven to 350°F (175°C).
- Grease a muffin tin or line it with muffin liners.
- Grate zucchini until you have about 2 cups.
- If the grated zucchini is very wet, gently squeeze out excess moisture.
- In a large bowl, whisk together 1 ½ cups all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, ½ teaspoon salt, ½ cup sugar, ½ cup brown sugar, 1 teaspoon ground cinnamon, and ½ teaspoon ground nutmeg.
- In a separate bowl, beat ½ cup vegetable oil, 2 large eggs, and 2 teaspoons vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients just until combined; avoid overmixing.
- Stir in the grated zucchini and any optional add-ins such as ½ cup chopped nuts or ½ cup chocolate chips until evenly distributed.
- (Optional) Prepare crumb topping by mixing ¼ cup flour, 2 tablespoons brown sugar, 2 tablespoons cold butter, and a pinch of cinnamon until crumbly; sprinkle over batter in muffin cups.
- Fill each muffin cup about three-quarters full with batter.
- Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
- (Optional) Whisk powdered sugar with a little milk until pourable and drizzle over cooled muffins for glaze.
