- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 cup carrots, sliced
- 1 red bell pepper, sliced

- 2 tbsp honey

- 1 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 425°F.
- Chop broccoli, cauliflower, carrots, and red bell pepper into even 1–2 inch pieces and mince the garlic.
- Place the chopped vegetables and minced garlic in a large bowl.
- Pour the olive oil and honey over the vegetables.
- Season evenly with salt and black pepper.
- Toss the vegetables until they are evenly coated with oil, honey, and garlic.
- Spread the coated vegetables in a single layer on a baking sheet.
- Roast for 20–25 minutes, turning or stirring once halfway through, until tender and caramelized.
- Remove from the oven and sprinkle with chopped fresh parsley.
Notes
Avoid crowding the pan to prevent steaming instead of roasting; use two baking sheets if needed., Feel free to add spices like smoked paprika or fresh herbs like rosemary or thyme to vary flavors., Cut veggies evenly, about 1 to 2 inches, for even roasting and cooking.
