Ingredients

  • 1 lb (450g) ground turkey
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 cups fresh spinach (optional)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder (optional)
  • Salt and black pepper to taste

Instructions

  1. Peel and dice the sweet potatoes into 1/2-inch cubes.
  2. Dice the onion and red bell pepper and mince the garlic.
  3. Heat a large skillet over medium heat and add 1 tablespoon olive oil.
  4. Add the diced sweet potatoes and cook, stirring occasionally, for 8–10 minutes until tender and lightly browned.
  5. Remove the sweet potatoes from the skillet and set aside.
  6. Add the ground turkey to the same skillet, break it up, and cook for 5–7 minutes until browned and no longer pink; season with salt and pepper.
  7. Add the diced onion, minced garlic, and diced red bell pepper to the turkey; cook for 3–4 minutes until the vegetables soften and the onions become translucent.
  8. Return the sweet potatoes to the skillet and stir to combine.
  9. Sprinkle smoked paprika, cumin, chili powder (if using), and additional salt and pepper; stir to coat evenly.
  10. Fold in the fresh spinach and cook for 1–2 minutes until wilted.
  11. Taste and adjust seasonings as needed.
  12. Turn off the heat and serve warm.
