- 1 tbsp olive oil
- 1 shallot, finely chopped
- 2 cups mushrooms (Portobello, Cremini, or Shiitake, sliced)
- 1 tsp thyme (fresh or dried)
- 1 tbsp balsamic vinegar (optional)
- Salt and pepper, to taste
- 4 slices Swiss cheese (or Gruyère)
- 8 slices bread (Rye, Sourdough, or Artisan)
Instructions
- Warm a dry skillet over medium heat.
- Add sliced mushrooms and cook 5–7 minutes to evaporate moisture.
- Add butter, olive oil, and finely chopped shallot; cook about 5 minutes until mushrooms are golden.
- Stir in thyme, balsamic vinegar (optional), salt, and pepper; remove from heat.
- Let mushroom mixture cool slightly.
- Butter one side of each bread slice generously.
- On the unbuttered side of a bread slice, layer Swiss cheese, a scoop of mushroom mixture, and another slice of cheese (Gruyère, Emmental, or extra Swiss).
- Top with remaining bread slice, buttered side facing up.
- Heat skillet or panini press and cook sandwich 2–3 minutes per side until bread is golden and cheese is melted.
