Ingredients

  • 1 cup heavy cream (or half-and-half)
  • 1/2 cup Parmesan cheese, grated
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add pasta and cook until al dente, about 8–10 minutes; reserve 1 cup pasta water and drain pasta.
  3. Heat a splash of oil in a large skillet over medium heat.
  4. Sauté sliced mushrooms until golden and tender, about 5–7 minutes.
  5. Add chopped onion and minced garlic to the skillet; cook until softened and fragrant, about 2–3 minutes.
  6. Stir in sun-dried tomatoes and broth; simmer for 3–5 minutes to blend flavors.
  7. Pour in heavy cream, stirring constantly; simmer until slightly thickened, about 3–4 minutes.
  8. Add cooked pasta and fresh spinach to the skillet; toss until spinach wilts and pasta is coated. Use reserved pasta water as needed to loosen the sauce.
  9. Sprinkle grated Parmesan cheese and red pepper flakes (if using) over the pasta. Serve hot.
