Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and sauté, stirring occasionally, about 3 minutes until soft and translucent.
  3. Add minced garlic and cook 1 minute until fragrant.
  4. Add ground turkey, break it up with a spoon, and cook 5–7 minutes until browned and no longer pink.
  5. Stir in sliced mushrooms, paprika, salt, and black pepper; cook about 5 minutes until mushrooms are tender.
  6. Whisk flour and chicken broth together until smooth.
  7. Pour the flour-broth mixture into the skillet, stir constantly, bring to a gentle simmer, and cook 3–4 minutes until the sauce thickens.
  8. Reduce heat to low and stir in sour cream until fully combined; cook 2 minutes without boiling to prevent splitting.
  9. Meanwhile, cook egg noodles according to package directions; drain and set aside.
  10. Taste the sauce and adjust salt and pepper as needed.
  11. Spoon the turkey stroganoff over the cooked egg noodles and garnish with chopped fresh parsley.
