- 1 pound fresh lobster meat, chopped into bite-sized pieces
- 1 pound sea scallops, cleaned and quartered for even cooking

- 2 cups heavy cream
- 1 medium onion, diced finely
- 2 cloves garlic, minced fresh
- 2 medium potatoes, peeled and diced small
- 2 celery stalks, chopped
- 1 teaspoon dried thyme
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh parsley, chopped for garnish
- 1 tablespoon olive oil (for sautéing)
Instructions
- Heat 1 tablespoon olive oil in a large pot over medium heat.
- Add diced onion and chopped celery; sauté until the onion is translucent, about 5 minutes.
- Stir in minced garlic and dried thyme; cook for about 1 minute to release flavors.
- Add peeled, diced potatoes and pour in the seafood stock; bring to a gentle boil.
- Reduce heat to a simmer and cook until the potatoes are tender, about 15 minutes.
- Slowly stir in the heavy cream to keep the broth silky smooth.
- Gently fold in chopped lobster meat and scallops; cook until they turn opaque, about 5 minutes, taking care not to overcook.
- Season with salt and freshly ground black pepper to taste.
- Serve piping hot, garnished with chopped fresh parsley.
