- 1 cup uncooked Arborio rice
- 4 cups whole milk
- 1 can (14 ounces) sweetened condensed milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon

- ½ cup raisins (optional)
- Zest of 1 lemon (optional)
- Ground nutmeg for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- Rinse 1 cup Arborio rice under cold water until the water runs clear.
- Combine 4 cups whole milk and 1 (14-ounce) can sweetened condensed milk in a saucepan and warm over medium heat until hot but not boiling.
- Beat 2 large eggs until smooth.
- Slowly whisk a small amount of the warm milk mixture into the beaten eggs to temper them, whisking constantly.
- Pour the tempered eggs back into the saucepan with the milk mixture and stir in 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt.
- Stir in the rinsed rice, 1/2 cup raisins (optional), and zest of 1 lemon (optional).
- Grease a 9×13-inch baking dish.
- Pour the rice and custard mixture into the prepared baking dish.
- Bake for 45–50 minutes, until the pudding is set and the top is lightly golden.
- Let the baked rice pudding rest for 10–15 minutes before serving.
- Sprinkle ground nutmeg on top if desired.
