Ingredients

  • 3 tablespoons melted coconut oil
  • 2.5 tablespoons honey
  • 1.5 teaspoons pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1.5 cups sliced almonds (can mix sliced and whole)
  • 2 cups old fashioned rolled oats
  • 1/2 cup raisins plus extra if desired

Instructions

  1. Preheat the oven to 300°F.
  2. Line an 11×17 inch rimmed baking sheet with parchment paper.
  3. In a large bowl, whisk together maple syrup, melted coconut oil, honey, vanilla extract, ground cinnamon, and sea salt.
  4. Add rolled oats and sliced almonds; fold to coat evenly.
  5. Spread the mixture onto the prepared baking sheet and press firmly with a spatula to compact into an even layer for big clusters.
  6. Bake on the center rack for 20 minutes.
  7. Rotate the pan 180 degrees and bake 10–15 minutes more until golden brown and crispy, avoiding stirring.
  8. Remove from the oven and let cool completely on the baking sheet.
  9. Break cooled granola into chunks and fold in the raisins.
