- 1½ cups water or broth

- ½ cup finely chopped fresh cilantro
Instructions
- Rinse the rice in a fine mesh sieve under running water until the water runs clear; drain well.
- Heat olive oil in a large saucepan over medium-high heat.
- Add minced garlic and sauté for about 30 seconds, until fragrant.
- Add the rinsed rice and kosher salt; stir and lightly toast the rice for about 1 minute, coating grains with the seasoned oil.
- Pour in water or broth and bring to a boil.
- Cover the pot, reduce heat to low, and simmer for 10 to 15 minutes until liquid is absorbed and rice is tender.
- Remove from heat but keep covered; let the rice steam for an additional 10 minutes.
- Add lime juice, lime zest, and chopped cilantro to the warm rice; gently stir to combine.
- Taste and adjust seasoning if necessary; serve immediately.
