- Juice of 1 lime (about 2 tablespoons), freshly squeezed

- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup (about 15g) fresh cilantro, chopped
- 1/4 cup (around 30g) red onion, thinly sliced
Instructions
- Shred the green cabbage.
- Grate the carrots.
- Thinly slice the red onion.
- Rinse and drain chickpeas if using canned.
- Combine shredded cabbage, grated carrots, and sliced red onion in a large bowl.
- Gently fold in the chickpeas, keeping them intact.
- Whisk lime juice, olive oil, salt, and black pepper in a small bowl until emulsified.
- Drizzle the dressing over the salad and toss gently to coat.
- Sprinkle chopped cilantro over the salad and mix lightly.
- Let the salad rest for 10 minutes to allow flavors to meld.
