Instructions

  1. Mash 1 small overripe banana to about 1/4 cup, discarding any excess.
  2. In a large bowl, mix melted butter or vegetable oil, brown sugar, and mashed banana until smooth.
  3. If making vegan, mix 1 1/2 teaspoons ground flaxseed with 2 tablespoons cold water and let sit 5 minutes to thicken (use as egg replacement).
  4. Stir in the egg yolk (or prepared flax egg) and vanilla extract until blended.
  5. Add the flour, salt, baking soda, and ground cinnamon; mix gently just until no flour streaks remain.
  6. Fold in the chocolate chips.
  7. Cover the dough and let it rest about 15 minutes while preheating the oven to 350°F and lining a baking sheet with parchment paper.
  8. Use a 1-ounce cookie scoop or spoon to drop dough balls onto the prepared sheet, spacing about 2 inches apart.
  9. Bake 10 to 11 minutes until edges look set and centers are slightly underbaked.
