- ¼ to 1/3 cup sugar (table sugar, brown sugar, coconut sugar, or sugar alternatives)
- 1 teaspoon vanilla extract
- 1 tablespoon vegan butter (optional)
Instructions
- Rinse the rice under running water until the water runs clear, then drain well.
- Pour 6½ cups almond milk into a saucepan, add the sugar, and heat over medium until it reaches a gentle simmer.
- Add the rinsed rice to the simmering milk mixture. Cook on medium to medium-low heat for 20-30 minutes, stirring frequently, until thick, creamy, and the rice is tender. Add more almond milk or water as needed if the pudding becomes too thick or dry.
- Stir in the remaining ½ cup almond milk and the vegan butter until smooth and silky, then remove from heat.
- Serve warm or chilled; top with optional toppings like cinnamon, fresh fruit, or chopped nuts.
